We love to celebrate Earth Day each year by making a fun craft or treat! These cookies were very easy to make, and there is no right or wrong way to make them! Check out this post for a simple Earth Day craft you can do with your littles!

Directions:

Melt 1/2 the bag of chocolate according to directions, add blue food coloring, pour into a ziploc bag, cut off one corner of the ziploc bag. Make sure to only melt the chocolate for the blue first (don’t melt enough for both at the same time as it will start to harden). 

Lay the Nilla Wafer flat (curved side up). Squeeze chocolate around the top edge of the cookie and in the middle. 

Use a knife to smooth and blend together. 

You can use royal icing if you want a smoother look. 

Melt the other half of your chocolate, add green food coloring, pour in ziploc bag, and cut the corner. Randomly squeeze areas of green. I liked keeping it textured. Again, you could use royal icing instead of chocolate if you want a smoother look.  

Each cookie will turn out a little different, which makes it more fun! 🙂 

To add a sweet touch, place a pink (or red) heart on each cookie by using any leftover melted chocolate to the back of the sprinkle. 

My daughter enjoyed helping to decorate the Earth cookies. We paired our yummy treat with this cute book to celebrate Earth Day!
